Hello, everyone! It’s almost time for Thanksgiving, which is one of my favorite holidays. I love spending time with family and cooking together (and the pie!). In honor of Thanksgiving, this week’s Reads and Recipes will feature Thanksgiving recipes.
I read lots of great running articles this week, but I want to focus on only two inspiring articles (well, one’s a video) that emphasize gratitude in face of life’s difficulties. Warning: you’ll need tissues for both.
Tom Rinaldi at ESPN, “Catching Kayla”
Kayla Montgomery is a remarkable high school distance runner, who trains with the boys’ team and won the 3200 meters at North Carolina State Championships this year—all while battling Multiple Sclerosis. She’s an incredible inspiration and a great example of someone who focused on what she could do instead of what she could not.
Toni Carey, Zelle at Runner’s World “She Runs: Elyssa Monaghan”
A tear-jerking story of a woman who, when her now-husband endured a terrible injury, found a way to get them both across the finish line.
Real Simple‘s Guide to Brining Your Turkey simplifies that step that can totally transform your turkey.
Alton Brown’s Good Eats Roast Turkey, because you can never go wrong with Alton Brown.
Pioneer Woman’s Pumpkin Cinnamon Rolls make a festive Thanksgiving breakfast.
This Crispy Sweet Potato Roast from Smitten Kitchen would make a delicious, healthy, and beautiful side dish.
I’m totally obsessing over this Apple Cranberry Crumble Pie from Joy the Baker.
And over this Cranberry Walnut Stuffing from FauxMartha.
The secret ingredient in The Great Pumpkin Pie at Sally’s Baking Addiction is so simple and brilliant.
What are you making this Thanksgiving?
